Drink it now or cellar for up to 10 years. No need to decant. Girolamo Russo is a Sicilian winery refounded in 2005 by Giuseppe Russo in honor of his father. Today, the company, located in the province of Catania, extends over approximately 20 hectares of vineyards, with centuries-old bush trained vines. Produced in just over a thousand bottles per year, Etna Bianco San Lorenzo is one of the winery's flagship wines. The grapes (primarily Carricante with minor additions of Grecanico, Catarratto, and other native varieties) come from parcels located on the northern slope of the volcano in the Passopisciaro area, at an altitude of 750 meters above sea level. Here, the vines, over eighty years old, enjoy a cool climate with significant temperature variations between day and night, and are rooted in volcanic soils rich in minerals and sand. After manual harvesting and vinification, the finished wine ages in used oak barrels for six months. In the glass, the wine reveals a brilliant pale yellow color enhanced by golden highlights. Its aromatic profile is broad and elegant, with initial notes of citrus, green apple, and lemon zest, followed by hints of aromatic herbs and wildflowers, white fruit, and orange blossom, against a mineral background. On the palate, it is intense and lively, savory and taut, with a distinctive freshness and a lean, mineral character. The finish is long and thirst-quenching. Try it with fried fish or veal scallopini in white wine.
