Located in Cunaco, Santa Cruz, in the Colchagua Valley, Lapostolle is a Chilean winery founded by Alexandra Marnier Lapostolle and her husband, Cyril de Bournet in 1994, after discovering a centuries-old vineyard in El Condor de Apalta. The winery is now led by Charles de Bournet, who carries on the winery's philosophy producing Chilean wines with a French touch. Lapostolle Rosé is a Provençal-style wine made from a blend of Cinsault and Grenache, with additions of Syrah and Mourvèdre. After harvesting and fermenting in stainless steel tanks at a controlled temperature, the wine ages in stainless steel for 4 months. The result is an elegant and youthful wine that reveals a pale pink color in the glass. Its aromatic profile is fresh and expressive, with notes of red berries, pomegranate, and watermelon, followed by herbaceous notes. On the palate, it is dry and fruity, soft and velvety, with a lively acidity and a creamy texture. It has a medium body and a long, refreshing finish. It makes an excellent aperitif, but also pairs well with a variety of vegetable and seafood recipes. For the best food and wine pairing, try it with ratatouille or Caprese pasta salad.
